Abstract
Agricultural primer product especially horticultura product like fruits, many of them to be processed into powder instant product, besides to increase the sold value but also to raise the preservation of the product with the taste and fresh aromatic is still felt. For making instant product of fruit, it could be done by drying process in spray dryer or mollen dryer machine and etc. In this paper will be studied drying process of banana fruit instant by mollen dryer machine. The material to be dried consist of liquid mixing of banana and sugar with ratio of 40 : 60. Mollen dryer machine consist of rotating spherical drum and there is stirred blade in it, while energy source for drying process is hot air spouted on the surface of mixing liquid by blower and electric element. From drying process data shown that, the final moisture content gained was 3,8 – 4,5 % while the initial moisture content of 44 – 46 % within 7 – 8 hours long process. The solid mass of banana was 3 kg. The performance of the machine will be evaluated based on the terms of efficiency of energy using, specific moisture extraction rate (SMER) and economic aspect.
